I recently had the pleasure of catering my big sister's baby gender reveal party! It was so great to gather with family I haven't seen in many years... and also selfishly a chance for them to taste my food. On the menu was Apple Baked Beans, Butternut Squash and Rosemary Mac and Cheese, Pesto Potato Salad, Greek Kale Salad, an Herbed Quinoa Salad, a Summer Fruit Platter with Dark Cherry Fruit Dip, and a Salsa Bar featuring Texas Caviar, Salsa Roja and Avocado-Cucumber Salsa Verde. To my surprise the dish that everyone raved about most was this Greek Kale Salad. Everyone has been asking for the recipe so here it it! Be sure to pay particular attention to preparing the kale - rinsing, drying, de-stemming, chopping and massaging the kale are what will make your kale salad amazing. Here's a quick video on how to de-stem kale the easy way!
You can also prepare everything ahead of time. Just keep all the ingredients separate and assemble/toss right before serving.

- 1 large bunch kale - *rinsed, dried, leaves removed and finely chopped
- 1 large handful of cherry tomatoes, halved
- 1 cucumber, seeded and diced
- ¼ of a red onion, thinly sliced
- ⅓ cup pitted Kalamata olives, halved
- ⅓ cup crumbled feta cheese
- parsley vinaigrette (see below)
- ¼ cup olive oil
- ¼ fresh parsley leaves, finely chopped
- 3T fresh lemon juice
- 3T white balsamic vinegar
- 2 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp coconut sugar or maple syrup
- salt and pepper to taste
- Whisk all ingredients together for vinaigrette. Add desired amount of vinaigrette to chopped kale leaves and with your hands mix and massage the vinaigrette into the kale leaves until they are all coated.
- Add in the rest of the Greek salad ingredients and toss together. Serve!
*To prepare kale: fill a large bowl with cold water and swirl each kale leaf around to rinse then shake off the excess water in the sink. Place the leaves on a kitchen towel and pat them dry to remove as much water as possible. De-steam the kale (video above) and chop the kale into bite size pieces.
